Sapwood Cellars

Sapwood Cellars is a Columbia brewery with two main areas of focus, barrel-aged mixed-fermentation beers and fresh hoppy ales. The founders built the brewery on a shared interest in brewing science, flavor and the craft of making beer. Their stated aim is beer that is balanced, drinkable and highly aromatic, without harsh bitterness or extreme sourness, so that it is easy to enjoy rather than something to conquer. The draft list rotates often and includes seasonal and limited variants, and beer is sold to go. The taproom is also home to Albura Taqueria, a kitchen led by chef Brock Clonchmore that serves tacos with vegan, vegetarian and meat options designed to pair with the beer. Trivia nights are a regular feature.
